GF Protein Pancakes

I have a small confession… I didn’t like pancakes until a few years ago! (I know, I can’t believe it either!) When I was younger we went over to my grandma’s house a lot, and without fail she would always make us pancakes! I would always politely refuse them, then rummage through her pantry for something else to eat!! But in the past few years I have become a normal person and learned to love them!! So when I was diagnosed with Celiac Disease, I was sad to realize I couldn’t eat them anymore. Of course they have GF mixes, but they don’t taste the same and have tons of extra chemicals. These pancakes are naturally gluten free, healthy, and taste like banana bread!!

INGREDIENTS:

  • 1/2 Cup Oats
  • 2 Eggs
  • 1 Medium Banana
  • 1/4 Cup Greek Yogurt
  • 1 Tbsp Baking Powder

DIRECTIONS:

  1. Put all ingredients into a blender, and blend until smooth.
  2. Heat and grease a pan over medium heat, then pour desired amount of batter.
  3. Let cook for about 2 min on each side
  4. Serve with syrup, fruit, or eat it by itself!!
